You don't KNEAD this bread!

I don't KNEAD this bread...
you don't KNEAD this bread ~ but it is worth making just the same.

Bread is something I eat sparingly,
WOW!
if I was not watching my waistline
I could eat not one, but several pieces of this ciabatta loaf!

Mix in a bowl
4 cups flour
1 1/2 tsp. salt
1/4 tsp. yeast
2 cups warm water

Cover bowl with foil and let sit undisturbed on the counter for 18 hours!


Uncover
fold gently over onto itself from the sides of the bowl
put some saran or cling film on the counter
flour lightly
tip dough out of the bowl onto the plastic 
with floured hands work gently to pop the bubbles
form into a ciabatta shaped loaf
flour top of loaf and cover with a tea towel and let sit for 2 hours.

Grease a sheet pan and generously sprinkle with corn meal.
Carefully roll the dough off of the saran wrap onto the pan.
Gently reshape if necessary.

Put into a preheated oven at 425
bake for 35 - 45 minutes


Cool on rack


Enjoy!

Wow I am impressed...
I think Mr. HB was happy as he had fresh bread with marmalade for breakfast.

I am thinking how lovely it would be served with balsamic vinegar and olive oil...
now I just need to plan a dinner party!

This recipe is definitely a keeper...

Bread hasn't been on my radar for some time, and I like the resultant weight loss. That said, a chunk of ciabatta with olive oil and balsamic vinegar sounds heavenly!

Cute play on words! I have been intending to try one of these no knead breads, but the ones I have call for a cast enamel vessel, Le Creuset, for example. Definitely going to try this one...and yes, I'm prepared to eat more than a few slices! I'm sure your dinner parties are just lovely!!

Looks delicious. I would eat many slices of it as well. Therefore, we only have white bread seldom at our home.
Rye bread every day.

I eat brown multi/grain or spelt bread for breakfast every morning with marmalade,today had a couple of croissants with coffee,need a treat sometimes.Your ciabatta looks delicious,fresh or warm bread gives me indigestion! Like that it has no sugar added.

I eat about 4 slices a day, I calorie count so it works into my diet well. 18 hours, wow, ok I will give this a go and report back.

I think I saw Laura Calder on Everyday French Cooking make this bread on one of her shows and I thought it would be fun to try it. Now seeing your recommendation I definitely will ~ it looks so good!

I've been making a very similar bread recipe for some years now. The recipe I use is from the New York Times and is baked in a heavy pan with a lid. I make whenever we have guests. When I make it for the two of us, it too difficult to not eat it while it is still warm! Here's the recipe we use: http://www.nytimes.com/2006/11/08/dining/081mrex.html

I used white flour but the recipe says you can use 3 1/2 cups white and 1/2 cup whole wheat.
You could experiement and try all whole wheat flour and see if it rises as high as the white flour.
