Seeing Red...recipes and pops of colour

I've been struggling to come up with cheerful and inspiring posts while we are isolating and cocooning at home.
Perhaps I have hit a bit of a writer's block so instead of obsessing about why I went to the archives and found some bright red images to share.

We start off with the recipe that I made recently...
My husband absolutely loves pasta!


To start 
I roast cut up tomatoes in the oven at 400 degrees for 45 minutes until soft.

Several cloves of diced garlic on top of the tomatoes and a bit of olive oil with fresh ground pepper.

This step makes the flavour richer and more intense.


Lidia Bastianich's meatball recipe is the best one that I have tried.

I use an ice cream scoop to make the balls more uniform.


I add the tomatoes that I have previously roasted 
as well as the other sauce ingredients


It serves 6 so we have it for two dinners with a tossed salad.
My husband usually takes the leftovers for his lunches...
as I said he adores pasta so he never tires of this dish.


We are enjoying our meals here in The Humble Bungalow.
(maybe a bit too much now that we are unable to go out for meals)
Dinnertime has become somewhat sacred...
Comfort food is being served regularly here during the pandemic.


This is the vintage ice cream scoop that I use for the meatballs...
I use it for cookies and muffins too.



I've been using leftover vegetables in my weekly soups.
Waste Not, Want Not.


Luscious juicy red tomatoes 
so pretty to look at...


Flying high up in the sky.


Full blown tulips


Heirloom tomatoes and a brioche loaf
slice the tomatoes and the bread
add butter and a sprinkling of salt
the perfect fresh sandwich
awaits



Tomatoes with fresh Mint 
drizzled with a balsamic cream reduction
makes for a tasty salad.




Pearls and stripes 
why not get dressed up?
Even if there is nowhere special to go...

Hope that you have enjoyed seeing some of these bright pops of colour.

A distraction from reality 
is what I am craving these days filled with so much uncertainty.
People are stressed and struggling to keep positive.

We are safe, the sun is shining, the garden is full of flowers.

There is food in the fridge and the pantry has the basic staples.
We have toilet paper!
Books to read and a knitting project on the needles.

Our world has changed but we are doing what we are told by staying home and staying safe and here in BC the curve is showing signs of flattening.

We are grateful for all the medical staff and essential services
 that allow us to remain safely cocooned at home.
We are all in this together in unity.

Thank you for all the pops of red. My favorite color. Have been trying to eat healthily but the 70% chocolate whispers my name every time I pass the pantry. Have to promise myself not to pick up any when I go to the grocery store later this week! Plan to make a tomato sauce for the chicken meatballs that were on sale last week. We will have 30 degree F weather & snow later this week. Carol in VT

I've been cooking things in big batches and freezing them: soups, stews, chili, spaghetti sauce. As I'm still working in the office a few days a week, and my husband is also still going to his office (don't worry, both buildings are empty, so we are socially distanced from others), at least I haven't had to make many lunches (we both eat very simply at work). I have found that ordering through DoorDash is good - a lot of local restaurants are participating, and I like being able to support local places. Plus, I hate cooking, so I look forward to my one day a week "eating out"!

Your pops of red are cheerful. I've been struggling all morning to write a blog post. I'm trying to keep up regular blogging routine since I started my new blog. We've been eating more than usual since we've been cocooning. I try to stay cheerful by choosing a travel picture each morning and posting it on Instagram. It serves to remind me that I have enjoyed lovely springs in other places and that this year we are having beautiful spring weather at home. After reading either your blog or Instagram, I started following Ina Garten. I have plans for lots of yummy meals. In 6 months, we'll be starting the diet thing again,
I think.

Cooking like you............MOST LOVELY THINGS had a GREAT and I MEAN A GREAT TOMATO SOUP a few posts back!Today the sun is out so I did a little watering.The chickens were happy to see me with leftover pasta!They received Penne pasta with salmon and cream with a dash of Paprika!They sure know the GOOD stuff when they are SO LUCKY to RECEIVE IT!
I have noticed my HIPS are hurting........is that an AGE thing or too much sitting?
MAYBE A LITTLE OF BOTH!

I've been at home, "teaching" online. It's very frustrating. This weekend I spent several hours each day working in the garden. I've planted onions, peas, radishes, carrots, beets, and spinach, and will do more as the weather warms up. I'm tackling the flower beds little by little and they are slowly showing signs of improvement. I think Victoria gardens are going to be spectacular this year with everyone spending so much time in them.

Your pops of red are delightful. Colour is a great pick-me-up.

Thank you for the delicious recipe, looks delicious. Our family has been affected by the virus and we are slowly recovering, which is wonderful. During this time we have rediscovered the pleasures of slowing down, reading, completing jigsaw puzzles, as well as Netflix, instagram, emails and receiving lots,of messages from friends and family. It truly shows you what are the important things in life. Yesterday we enjoyed watching the Andrea Bocelli performance at the Duomo in Milan, so beautiful and definitely worth watching on You Tube. Keep well and make the most of these uncertain times.

Oh my, those tomatoes look just so delicious! Your pops of red do brighten the day. I am struggling to get the food items we like, with home delivered groceries these days. Not everything is up to standard, and some items unavailable. I have had to order a week in advance to get a designated delivery time. It was so much quicker to drive up to the shops, even though they are 5km away. A lot of sewing, some watercolour painting, and working on the gardens fill our days. We are working on 'date night' every weekend where a dress and good shirt must be worn. I am planning a progressive dinner this week, one course in each location: deck, dining room, TV room. All helps to pass the time :)

All of these up lifting pictures of red, such a happy color. Tonight I made my favorite vegetable soup, a recipe I simply made up, it has lots of shredded cabbage in it which in my opinion is what makes it so good And I splurged and used some of my precious Bisquick to make biscuits - it was worth it. Yum!

Red is a wonderful shade it feels like it is full of energy!
I haven't had any chocolate yet but it is early days...
Snow days are a gift here and I like making soothing soups and homemade bread.

Clever you to make extra portions for the freezer...cook once serve twice (or more) is so sensible...especially if you are not a keen cook!
Friends are using those Door Dash and Skip the Dishes services for their weekly "date night dinners." I like to support local shops and restaurants too and it is very important to keep them busy so they will be around after we get the all clear to resume dining and shopping.

We need to keep our spirits up during these weeks and months of isolation...pictures, books, flowers, food and wine are helping us...and positive mental health is vital.

I will have to track down that tomato soup recipe...comforting soups are so soothing.
I had no idea that chickens like pasta! Are they an Italian variety of chicken? :-))

My hips were hurting early in isolation and it was my hip flexors from too much sitting so I upped my walking and gardening and they are back to normal.

Enjoy your garden I bet its gorgeous...I saw a rose on your IG page!!!
Cannot wait until ours start blooming.

Our gardens are such a sanctuary and they will probably be in the best shape ever with all the time that we are spending in them. We harvested our first feed of asparagus last night...so tasty and there will be more as we have two large raised beds planted.
Online teaching must feel rather different...hope you are getting lots of technical support and ideas from your colleagues.

Oh I am sorry to hear that you and your family contracted the virus...good to hear that you are on the road to recovery...take care.
We are so fortunate that there are so many ways to distract ourselves during this time of isolation...technology is helping us to stay social without leaving the comfort of our homes.

Glad to hear that you liked the pops of colour...your red cardinals make me smile!
There are some things that are being rationed here....flour, sugar, butter and eggs. The grocery stores are fairly well stocked early in the day but later they are depleted. Online grocery shopping is happening here too but is delayed due to the volume of orders...sometimes up to a week ! I shop once a week for our elderly neighbours and ourselves. Date night sounds like a fabulous idea!

The dinner sounds really flavourful and biscuits are the ultimate in comfort aren't they? So worth the effort.
I wonder if you could find a recipe for bisquick to make your own? Might be fun to see if you can source one from the internet.

The "extra time" that we have in our days has us turning to creative pursuits...like your fibre art I am knitting, cooking and gardening as well as walking. Not so much housework though! That is not inspiring me at all right now!
