Mom's Peanut Butter Cookies

Mother gave me a recipe for peanut butter cookies awhile ago,
I filed it in my recipe box for a rainy day.

That rainy day happened and it turned into 3 days of rain...

On those three days I tiptoed outside for the briefest of walks,
the rest of the days I read, did laundry, made soup, a tasty shepherds pie and when my eyes were fatigued from my reading
I found Mothers' speedy peanut butter cookie recipe in my recipe box.

When I read her recipe I was in doubt...
had she forgotten something?
Can one make cookies using only 3 ingredients?

So I thought hmm maybe I would try...
what have I got to lose?

Speedy Peanut Butter Cookies

2 cups light Peanut Butter
1 cup granulated sugar
2 eggs

Mix together, roll into balls, flatten with a fork on an un-greased sheet pan.
Bake at 325 degrees for 15-20 minutes.
Transfer to a rack to cool



Using a scoop for cookie dough is quite possibly my favourite trick that Martha Stewart shared with her viewers from her TV show.

Flatten with a fork.


After baking cookies place on a rack to cool.

Invite someone over to share
a pot of tea or a coffee 
maybe even a glass of milk with the grandchildren
put the cookies on a plate and see how long they last!


I should have never doubted MOM.
I have learned so much from her over the years.
She will always will be a special person in my life.

I wondered about the gluten-free aspect because I regularly entertain discussion group members who follow a gluten-free diet. I'd just have to check that the peanut butter had no fillers. I'm reading the Mayor of Casterbridge for November book club. Off to Granville Island today for the Writers' (in the rain) Festival. We're lucky to still have mothers and to be able to visit with them often.

Well they may be gluten free but not nut free sadly. Still I might be able to use Wow butter instead. Look yum.

It doesn't matter how old we are, there's nothing like baking with our Mother's or baking using our Mother's recipes. Our children and I bake together regularly, I teach them the things my own Mother taught me, everything passed down through the generations.

My sister is gluten free, and she uses this recipe for her family. So I thought it was a new one developed for those who are GF. Nice to know it's really an oldie, but goodie. I had them at my sister's. Very good.
Baking cookies on a rainy fall day just seems to make sense, doesn't it?

We have some family members with celiac disease and this would be a great recipe for them. Thanks for sharing. I've seen similar recipes around, but have always wondered if they would truly work. You've shown me that they would!

What an interesting recipe. When I read it, I thought it could not possibly work without a flour substitute, but there you go, perfect cookies all in a row :) I will write it down to try when my grandchildren visit. Cute sunflower!

Mom might have found it in one of her magazines...she gave it to me ages ago but her original recipe, the one we made when I lived at home over 40 years ago, called for flour.

Those sunflowers were left by someone at the beach near the shoreline...I had to detour on my walk and get close enough to capture them.

I want to highlight the message "be well and be kind" that is why I use a bolder font and use some capitals...
Using all caps as The Contessa does, is her signature way of writing and I do not find it offensive in any way...she is a kind and creative woman whose blog shows her zest for life.
