Roasted Tomato Pasta Sauce and a few tidbits from the weekend...


Sayward Beach 

We packed a wicker picnic basket with some sandwiches and fruit
popped in our water bottles 
got in our car and drove out to Sayward Beach.
The sand was warm and soft
there was a gentle breeze blowing, blue skies and sunshine.

There were only a handful of people there...
  it didn't take us long to find a quiet spot to eat.

So soothing....
listening to the waves as they crashed along the shore
 the cries of the gulls
the warmth of the sun
the ripples on the sea

a lovely lunch and a perfect spot to bring the grandchildren
which we will do when we are allowed to gather safely again.


I bought two new David Austin roses on Easter weekend.
Imogen and Boscobel

We planted them in large black pots
placed them inside the new deer fence
on the gravel.


Our Star Magnolia is in bloom.


Roasted tomatoes and garlic are ready for a pasta dish.

Tomato Sauce

Saute: 1 diced onion, 2 ribs of celery sliced thinly, 1 red pepper diced
 in olive oil until softened.
Add:  the roasted tomatoes and garlic
1 can of San Marzano tomatoes
1 tsp. red pepper flakes (or more if you like it spicy)
2 tsp. dried oregano
salt and pepper to taste

Simmer for about an hour.
Cook dried or fresh pasta, drain and add sauce
 Top with a fresh grating of reggiano parmigiano

What are you reading?

I've been reading less as I am walking more.
Walking is a healthy habit that many people have recently embraced especially because it is a safe activity during Covid.
Many wear masks now when walking as some of the parks are busy and crowded...
I try to walk in quieter areas.

We are experiencing an uptick in the number of covid cases...
the 3rd wave has hit Canada.
Vaccinations are ongoing and we should be eligible for our shots in a few weeks.

It has been a tough year for all of us.
I am so looking forward to moving on and seeing friends and family safely.

How are things going where you live?

Australia (and NZ) are almost back to pre Covid, gatherings, visiting, dancing, singing, most events (Covid safe) just distancing, hand sanitising and QR check in at many places. No community transmission for many months. Australian residents returning from overseas are quarantined in special hotels for 2 weeks and must return negative tests before they can return to their homes. Usually there are between 0-6 positive cases in returning residents daily. We realise we are in a very very fortunate position. Our State and Federal Govts have done an excellent job. Vaccinations are a little slower than expected but this seems to be a supply issue. Quarantine free travel has been opened up between Australia and NZ, much to our relief as our son in law is a Kiwi and the families in Aus and NZ looking forward to being together again. Hope things get better for the rest of the world soon.

A beach is always a nice place to visit. I'm an ocean rather than a lake person. I like tides and the salty seaweed smell. It's always a good feeling to get those steps in. I visited our community gym today for the first time in 14 months. You have to make an appointment and work out independently. They provide a spray bottle for the equipment and of course, masks are obligatory. I've got quite the pile of books as well. I'm reading the latest Maisie Dobbs mystery. It's funny how the books accumulate. Your tomato sauce looks healthy. There is something about homemade sauce! The numbers were high again today. I hope that our circuit breaker yields results.

OK, I’m making the tomatoes today ! They looked so go on Instagram I came over to get the recipe. So easy too. Going to get deer feed, bedding plants & to the produce section of the Texas-only HEB, H.E.B. , which are everywhere in Texas. The tomatoes are brilliant right now too. PS: the deer ate our newly purchased ESPERANZA deer-resistant plants last night so deer feed is vital 😎

Visiting a beach is so relaxing. We did the same on Easter Monday. I bought a David Austen Boscobel rose last summer and oh, my, she's a beauty! Lovely pink to coral blooms that repeat over and over. I'm looking for a yellow rose this year, and I'm thinking of The Poet's Wife. Where do you get your roses?

A picnic on the beach, how wonderful. Our lockdown restrictions start to ease next week, I can’t wait, I need a new sofa, laptop and walking boots!! I’m increasing my walking in an effort to help lose the lockdown weight. I’m reading “The Rise and Fall of a Yummy Mummy”, not a page turner but an easy light read.

I get my second shot end of the month so far so good!
